  Jaglite; the only limits are the limits that you can think of and your imagination will go to, and of course your wallet and ability to make it work.
There is a lot of ways to mount them and to use them as storage, you could do the H-d thing and make an inner bag that would slid in and out with your items in it to take into the motel or the tent as you wish. Making them lockable will also be a challenge.

That is excellent!
I don't think they actually fit with the style of the bike but he did a fine job. 
I had not even considered mounting them on their side like that.
Gives me even more to think about.

The rack is made of 10 mm square bars, for the gas-can "basket" I used some flat iron easy-to-bend scrap pieces.    I like your winter project ideas, i actually thought of using gas cans as panniers myself. It would be really cool to see that idea realized, so be sure to post some pics if You go ahead with it!

Did you weld up the mount also?

I have been thinking of doing something similar on my 1500, but not for gas.
I am thinking of getting two gas cans (5 gallon) and cutting the top off, putting hinges and a latch on the top, to make my own custom panniers.
I would use dry bags inside rather than trying to seal the top.
I think I would have to take a section out of the height of the gas cans but I don't have the dimensions to know for sure.

My bike has leather panniers (saddle bags) and they are ok but...

They don't hold much and I am styling my bike with this barn find history:

WWII GI who had kept the dream of buying a bike and riding over the horizon if/when he made it home.
He had just enough money to buy a new left over 1945 base model with no chrome or extras.
He then bought army surplus items cheap to outfit it for extended travel.

Just another winter project idea I am kicking around.
Along with painting the rims, making a new exhaust system, and batwing fairing...

Put together a "rucksack-rack" of some scrap iron. I'm quite pleased with it, very easy to attach  to the bike and to strap things on to. Also serves as a backrest!   Painted with Hammerite.
